The first U.S. outpost of this Tokyo favorite, Bellevue's Kukai brings steaming bowls of perfectly done ramen to the Puget Sound area. Efficient and affordable, the 80-person restaurant offers nine different types of the noodle soup classic. (Don't forget to add the half-boiled egg to your bowl.) In addition, there are "donburri" rice bowls and savory sides as well.
