The classy Seattle classic has always managed to evolve gracefully, and has done so again with a recent "price change" that expands its prix fixe options. Chef Jason Franey has eased the kitchen into the modernist era, offering seasonal, meticulously engineered creations bursting with flavor. To start, delicate, delicious amuse bouche perch on a Lucite stand. Soups are vivid, sauces stand out. Fig and eggplant complement sweet-fleshed dorade; watermelon and its pickled rind play well with cured sea scallops. At the end, choose lovely French macarons from a handmade box. Service shines; expert sommeliers guide you through a world-class wine list.
