‘Hell’s Kitchen’

Cover your ears (and for goodness’ sake don’t overcook the risotto)! The reality competition/scream-a-thon is back for an 11th season with 20 new contestants and chef Gordon Ramsay in Las Vegas for the season premiere. 8 p.m. Tuesday on Fox (seattletimes.com/tvlistings).

“The Westerner” (1940), 7 p.m. (TCM): Hanging Judge Roy Bean spares a drifter who claims to know Lillie Langtry.

“Face Off,” 9 p.m. (Syfy): The artists must create an Egyptian god mummy inspired by the “Evil Dead” franchise.

“The Taste,” 9 p.m. (ABC): The final four contestants each present three dishes to the judges; after an elimination, the remaining contestants must prepare their most decadent dish in hopes of wowing the judges and claiming the grand prize.

“Top Gear,” 9 p.m. (History): The guys attempt to build the perfect car for the apocalypse; the guys race across a ghost town.

“Smash,” 10 p.m. (NBC): Derek and Karen must make a difficult decision; a complication arises in Jerry and Eileen’s partnership; Ivy makes a final effort to save her and Terry’s show, with unexpected results.

“Justified,” 10 p.m. (FX): Drew Thompson slips through the fingers of Raylan, Boyd and the Detroit mob.
