Focaccia is made with tomatoes and Fontina cheese. Tomatoes sweeten during a short spell in the oven, their juices soaking into the bread, crisp on the bottom, soft on top and inside.
The tomatoes sweeten even more during their short time in the oven; they stay intact, but a bit of juice bleeds out, which makes the bread all the more luxurious.
