Kate McDermott pulls her pie from the oven. A believer in using all five senses while baking, McDermott listens to her pie to decide if it's done. Listen for a soft whup-whup-whupping sound, she says, a sign the filling is bubbling away as it should. A student as well as a teacher of pie-making, McDermott owns about 30 books on the subject. Among her favorites, Pat Willard's "Pie Every Day."
