Tastes of Spain reign at Ocho and Txori

At Ocho, a cocktail called El Picador is garnished with a sprig of rosemary piercing a piece of beet, which gradually turns the drink fuchsia. It pairs well with the Three Amigos, a paella topped with shrimp, a slice of chorizo and a clam.
