Scott Emerick says his prom-night dinner at Campagne changed his life. He went on to cook alongside Jim Drohman at Campagne and at Le Pichet before opening Crémant in the Madrona neighborhood. The Paris-trained chef serves a variety of French-bistro classics, including house-made charcuterie and golden pomme frites.
